| Creamy Caesar Dressing: Combine first 8 ingredients in small bowl. Makes about 1/2 cup (125 mL) dressing. Chill for 10 minutes to blend flavours. Blackened Chicken: Heat wok or large frying pan on medium-high until very hot. Add cooking oil. Add chicken. Stir-fry for 6 to 7 minutes until chicken turns white. Add next 8 ingredients. Stir-fry for 8 to 10 minutes until chicken is no longer pink inside. Remove from heat. Put lettuce, croutons and second amount of Parmesan cheese into large bowl. Toss. Drizzle dressing over salad. Toss. Arrange on 8 dinner plates. Scatter chicken mixture over top of each. Garnish each with Parmesan cheese. | Tip: Red and white wine vinegars may be used interchangeably in most salad dressings. A recipe may call for one over the other because each offers a slightly different flavour and colour, much the same as red and white wines.
